You Can Now Recreate Nigella Lawson’s Toasted Marshmallow And Rhubarb Cake

There’s something about Nigella Lawson that separates her from the rest. While most chefs appear brash and have a penchant for slinging curse words at rapid speed, Nigella is instead composed and something of a wordsmith. She has a way of describing the joy of cooking, baking and of course, our favourite part, the eating. 

Cementing her status once more as everyone’s favourite chef, Nigella appeared on a recent episode of MasterChef Australia 2021 to showcase her latest accomplishment: a Toasted Marshmallow and Rhubarb Cake that is the thing of dreams.

After contestants had to battle it out in a classic MasterChef taste test, trying 18 different biscuits and having to guess as many biscuit flavours in the space of 15 minutes as possible, with the answers covering everything from Vegemite to Chocolate.

Those who found themselves in the bottom of the pack then had to create Nigella’s piece de resistance, he the cake. But as is always the case with the famed cooking show, there was a twist and in this instance, a ‘twist’ could be doing the challenge a disservice. The contestants didn’t even get to see the cake – or taste it. Instead, they simply were provided with Nigella’s own detailed verbal description of her cake. 

Nigella describes her cake as “splendidly celebratory, but not dauntingly difficult.” She adds, “you need a bit of elbow grease and a blow torch, but making it feels more like play than work to me.” 

The recipe has now been provided on Nigella’s own website and it’s a big one. There are 13 steps involved, making it quite the daunting feat for the baker who rarely dons an apron except for public holidays and the occasional work birthday party. But as far as we’re concerned, this is a recipe worth mastering and you need only look at the cake to see why.
